Mix the ingredients for the marinade in a deep dish.
Place the beef strips in the dish and roll in the marinade until fully coated. Cover and let marinate in a cool place for 2 to 8 hours.
When ready to cook, heat half the oil over medium heat in a large pan. Fry the beef strips in the marinade for 3 to 4 minutes, turning them when half done. When cooked, set aside.
Using a fine colander, filter the marinade from the pan.
Pour the marinade back into the pan. Bring to a boil and let simmer on low heat for 2 to 3 minutes.
In another pan, heat the rest of the oil over low heat. Cook the eggs on one side only.
Reheat the cooked rice in the microwave.
Serve the rice in four bowls. Garnish with the carrots, cucumber, mushroom, bean sprouts and baby spinach. Top each serving with an egg and beef strips. Drizzle the marinade over each portion then garnish with toasted sesame seeds.
