Rainbow salad in peanut sauce

  • In a pot of boiling salted water, cook the Haiku green tea Asian noodles for 3 minutes. Rinse under cold water and drain. 

  • Whisk together the ingredients for the sauce in a salad bowl.  

  • Add the noodles, carrots, baby spinach, red cabbage, peppers and red onion into the salad bowl. Pepper to taste. Mix well. 

  • Serve the salad in the dishes and garnish with peanuts and coriander.
