In a large saucepan, bring the first eight ingredients to a boil.
Reduce heat to medium and simmer 3 minutes.
Add the chili, lime juice and zest.
Season to taste with salt and pepper.
Simmer for another 2-3 minutes, add the sweet peas and stir.
Remove from heat and add the green onions and bok choy.
Mix and wait one minute before serving.
